1/2cupfresh strawberries,diced (plus more for topping)

Instructions
Preheat oven to 350 degrees.
In a blender, add rolled oats, milk, banana, maple syrup, Strawberry Banzo Butter, baking powder, and vanilla extract.
Blend together until smooth. It should have a consistency like pancake batter. Fold in strawberries.
Spray an 8-ounce ramekin with cooking spray, then pour over the oats batter.
Bake for 20-25 minutes until cooked through and slightly golden brown on top.
Top with more fresh strawberries and plenty of Strawberry Banzo Butter drizzled on top!

*Banzo Butter Note: Banzo Butter uses high quality ingredients without preservatives so oil separation is natural. Be sure to thoroughly stir Banzo Butter before adding. I recommend using a fork and stirring for 1-2 minutes until creamy and similar in texture to nut butter. You can also use other flavors of Banzo Butter like pumpkin spice or chocolate.A note on microwaving: If you don't have time to bake it, I've actually tested microwaving this baked oats recipe too–and it works! Simply microwave for 2 minutes until fluffy and cooked through. Do note, this method makes it a bit more dry though.
