This hydrating Watermelon Mocktail contains juicy watermelon, zesty limes, and coconut water. Top it off with your choice of sparkling water before garnishing with fresh mint.
In a blender, combine watermelon, whole limes**, coconut water, and sweetener. Blend for just 10-15 seconds until pureed.
Strain the watermelon mixture over a pitcher through a fine-mesh sieve to remove any pulp or seeds. Use the back of a spoon to gently press down on the pulp to help speed up the straining process.
Place frozen watermelon balls into 4 tall individual glasses. (If you don’t have any ready to go, feel free to just use ice cubes.)
Evenly distribute the strained watermelon mixture between the 4 glasses.
Add about 1/2 cup of sparkling water to each glass to top it off with some bubbles.
If desired, add a few ice cubes to each glass to keep the drink chilled for longer and garnish with fresh mint leaves on top.
This watermelon mocktail is best if enjoyed right away but can be stored in the fridge and enjoyed for up to 24 hours too.

*Sweetness: This drink leans towards the less sweet/more tart side, but feel free to add more sugar to taste if you like your mocktails more sweet!**Whole limes: For this recipe, we are using the whole lime, skin and all. This gives it a super fresh, tart taste. However, if you prefer your drink with less of the lime flavor, you can just use the juice from 2 small limes and discard the skin.
