creamy peanut butter

low-sodium soy sauce
(or tamari if gluten-free)

tablespoons
lime juice,
about 1 large lime squeezed

tablespoons
rice vinegar
1
tablespoon
maple syrup
1
tablespoon
sesame oil
1
tablespoon
garlic,
minced or grated (about 3 cloves)
1
tablespoon
fresh ginger,
minced or grated (about 1-inch piece)
Instructions
Combine all ingredients in a medium sized bowl and whisk with a fork until combined. Add a couple tablespoons of water as needed.*
Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.

*This sauce thickens up overnight. Add a small amount of water the next day if needed.
