These Accordion Sweet Potatoes are seriously such a fun, creative addition to your holiday feast or weeknight dinner. Serve them as an appetizer or side dish that’s sure to impress!
Peel the sweet potatoes skin then use a sharp knife to cut potatoes into 1/2-inch slices lengthwise. Since 1 sweet potato gives you about 3 slices, you should get around 12 slices total.
Place chopsticks next to the potato slice to prevent cutting all the way through. Make small, close horizontal cuts down across the length of all the potato slices.
Then, flip the potato slices and repeat–this time with diagonal cuts downwards.
Place slices on either an oven baking sheet or air fryer basket. Then, spray each side of the slices with cooking spray and evenly sprinkle over seasonings.
Oven instructions: Place sheet pan in oven and bake at 425ºF for 40 minutes, gently flipping them with a spatula halfway through. Let them cool outside of the oven on the pan for 5 minutes before touching to avoid breakage.
Air fryer instructions: Alternatively, you can air fry at 400ºF for 15-17 minutes until crispy and golden. Let cool in the air fryer basket for 5 minutes before serving.
While the potatoes are cooking, prepare the aioli by mixing all ingredients together in a small bowl. Serve with accordion potatoes for dipping.
