Blueberry Sheet Pan Pancakes

Sheet pan pancakes are a delicious way to enjoy pancakes without the mess. These heart shaped pancakes are made with oat flour and blueberries for a heart-healthy breakfast.

Cooking spray

spooned and leveled into the measuring cup

ground flaxseed

(almond milk, dairy milk, soy milk, oat milk, etc.)

liquid sweetener of your choice
(maple syrup, honey, agave, or date syrup)

fresh blueberries
Toppings of your choice:
More fresh blueberries
Homemade blueberry maple syrup
Chia seed jam
Yogurt
Toasted coconut
Chocolate chips
Creamy nut butter
Chopped nuts of your choice
(such as toasted sliced almonds, honey roasted pistachios, or chopped walnuts)
Seeds of your choice
(such as hemp seeds, chia seeds, or more ground flaxseed)

Instructions
Preheat your oven to 425°F. Grease a 8x8” square pan or 8” heart pan with cooking spray and set aside.
In a large mixing bowl, combine the oat flour, flaxseed, baking powder, and salt.
In another mixing bowl or large liquid measuring cup, whisk together the milk, liquid sweetener, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
Pour the batter onto your greased pan and use a spatula to smooth it out evenly.
Bake for 15 minutes, or until the top is dry to the touch and the center is cooked through. Once cooked, let cool for 5 minutes in the pan.
