These Colorful Veggie Pinwheels are perfect to prep for a busy work week or as a healthy back-to-school snack, Plus, you get to customize with your favorite veggies, leafy greens, and hummus.
1cuphummus of your choice(classic, everything bagel, pine nut, roasted red pepper, southwest, garlic, caramelized onion, etc.)
6large leaves ofleafy greens of your choice,washed and completely dried (I typically use a large romaine leaf but you could also use kale, spinach leaves, or chard. It’s important for the leaves to be dried so it doesn’t get the tortillas soggy)
6cupsveggies of your choice,sliced into matchsticks (bell peppers, cucumbers, carrots, tomatoes, cabbage, etc. Try to pat the veggies dry with a paper towel before adding so the wrap doesn’t get soggy - especially watery veggies like cucumber)

Lay out tortillas and spread a thin layer of hummus over each one (about 2 tablespoons per wrap).
Place dried lettuce leaf or leafy green on top of the hummus. Press the lettuce or leafy green down to flatten if needed.
Arrange the sliced veggies evenly across the lettuce leaf in horizontal rows.
Roll each wrap tightly towards the horizontal rows of veggies then slice into 1-inch pinwheels.
Store pinwheels in an airtight container in the fridge for up to 3 days.
*Tortilla Note: I typically use whole wheat tortillas for an extra nutrition boost. However, you could also use another type of 8-inch tortilla such as spinach tortillas, tomato basil tortillas, or another favorite flavor or yours!
