This Holiday Christmas Rice Wreath recipe is the perfect side to bring some festive flair to your holiday table. Topped with colorful “ornaments” like roasted sweet potatoes, pistachios, pomegranate seeds, and cilantro. Plus, you get to customize it with your choice of sauce on top.
3cupslong grain white rice of your choice(You can pick up a regular bag of long grain white rice or a specific variety like Jasmine, Basmati, or Texmati)
1/4cupsauce of your choice(pomegranate molasses, tahini sauce, infused olive oil, or melted ghee/butter)
Instructions
Cook sweet potatoes in the oven according to the package instructions.
Cook the rice by bringing water or broth to a boil in a large pot. Add rice, reduce heat to a low simmer, and cover.
Let simmer for about 15-20 minutes or according to the package cook time — and don’t lift the lid to check on it or it will release all the steam.
Once the rice is fully and fully cooked, remove from the heat and fluff it with a fork.
Spread the cooked rice evenly into a circular chip dip dish to form the wreath shape.
Top the rice wreath with roasted sweet potato cubes, sprinkling them evenly around the wreath. Follow with pistachios, pomegranate seeds, and a sprinkle of chopped cilantro. This gives the wreath its “ornaments”!
Drizzle with your choice of sauce before serving. We like to put extra sauce in the center of the chip dip dish in case people might want to spoon over more!
