Individual Christmas Trifles — with Strawberry Santa Topper
Mackenzie Burgess, RDN
This Individual Christmas Trifle recipe is the perfect festive treat, with layers of creamy Greek yogurt, fresh fruit, and fluffy cake. Topped with adorable Strawberry Santa hats, it's as fun to make as it is to eat! Plus, you can customize it with different fruits.
Combine Yogurt Mixture: In a bowl, whisk together the Greek yogurt, sugar-free pudding mix, and vanilla protein powder until smooth and creamy.
Optional: For easier layering, transfer the yogurt mixture to a piping bag or a resealable plastic bag with a corner snipped off.
Layer the Trifles: In two small (5-ounce) trifle glasses, layer the ingredients in this order:• 1/4 cup yogurt mixture• 2 tablespoons diced red fruit• 2 tablespoons diced green fruit• 1/2 cup yellow cake cubes• Top with another 1/4 cup yogurt mixture• Repeat the layers in the second trifle glass
You should end up with some extra yogurt mixture left to use for the Strawberry Santa toppers if desired — instructions below.
Strawberry Santa Instructions:
Wash and thoroughly dry the strawberries.Slice off the top of each strawberry to create a flat base. Then, cut a small slice from the middle of the strawberry to form the "hat."
Pipe a layer of leftover yogurt mixture onto the base of the strawberry to form Santa's face and beard. It should be about ½-inch off yogurt. Carefully place the strawberry "hat" on top.
Using tweezers or your hands, add two black sesame seeds for the eyes and a red sprinkle for the nose. Pipe a small dollop of yogurt mixture on top of the hat for a pom-pom.
Place a completed Strawberry Santa on top of each trifle, securing it with a toothpick. Serve immediately.
Notes
Greek Yogurt Icing Note: I've found that the icing can sometimes have a different consistency depending on the yogurt and protein powder used. I tend to use a Costco brand Greek yogurt that is quite thick. If you're icing is looking too thin, you can always add some extra pudding mix or a spoonful of powdered sugar to thicken it up. Also, be sure you are using Greek yogurt, and not regular yogurt, as regular yogurt will be too thin.
