Heat olive oil in a large pan over medium high heat. Add onion and veggies and saute for 3-4 minutes.
Break up tofu into smaller pieces with hands.
Add over crumbled tofu and break up more as needed with a spatula. Saute for 3-4 minutes.
Add over nutritional yeast, garlic powder, turmeric, black pepper and stir together for 1 more minute until everything is combined. Salt to taste. If the pan looks dry, you can add a splash of water or broth.
Serve tofu scramble with any desired base and toppings of your choice.
