(mashed potatoes, mashed sweet potatoes, or mashed cauliflower)

finely chopped

plus more for topping
(cheddar, parmesan, mozzarella, etc.)

Instructions
Combine all ingredients together in a large bowl and stir until combined.
Scoop mixture over heavily greased muffin tins until almost full. Top each muffin with a sprinkle of cheese.
Bake for 20-25 minutes at 375ºF until golden brown on top.
Let cool in the pan completely (about 10 minutes) before using a spoon to gently transfer to a serving tray.
Store in fridge for up to 4 days or freeze up to 3 months.
