  1. Prep the peppers: Start by washing the mini bell peppers thoroughly and patting them dry. Slice each pepper in half lengthwise, and remove the seeds and membranes to create little “boats.”

  • Fillings of your choice: You can choose any favorite hummus, whipped cream cheese, or guac. Feel free to make your own homemade or stick with a ready-to-go store bought brand.
  • Spices of your choice: Smoked paprika, red pepper flakes, and bagel seasoning are some of our go-to spices. However, feel free to use any you like best. 

Can I make it ahead of time?

Yes, you can! Prepare the peppers and fillings up to a day in advance and store them separately in airtight containers. When you’re ready to serve, simply fill the peppers and add your toppings. This makes them perfect for meal prep or party planning.

How do I store leftovers?

Store any leftovers in an airtight container for up to 3 days in the fridge. Unfortunately, these don’t freeze well, as the peppers tend to lose their crunch.

Ingredients
  

  • 8 assorted mini bell peppers of your choice (red, orange, or yellow)
  • 1 cup filling of your choice (hummus, whipped cream cheese, guacamole)
  • 1 tablespoon spices of your choice (smoked paprika, red pepper flakes, bagel seasoning, etc.)

Instructions
 

  • Wash the mini bell peppers and pat them dry. Slice each pepper in half lengthwise, removing the seeds and membranes to create boats.
  • Fill each pepper half with your chosen filling (about 1 tablespoon per pepper half).
  • Sprinkle your chosen spices over the filled boats and serve.
