Ever since I moved to Los Angeles, I've been obsessed with the $23 Strawberry Skin Glaze smoothie from Erewhon - IFKYK. So to save money, I created a dupe that's inspired by the famous drink. This Hailey Bieber inspired smoothie has a thick, creamy strawberry base layered with a homemade strawberry chia glaze and coconut cream swirls that look just as stunning as the real thing. Like all of my recipes, it's completely customizable too - you can use any sweetener and add-ins of your choice.

Ingredients
For the homemade strawberry glaze:
- Fresh strawberries: The base of your glaze - fresh berries blend smoother than frozen here, so don't swap them out for this part.
- Sweetener of your choice: A Medjool date adds a caramel-like depth; honey or maple syrup works just as well for a more classic sweetness. Sugar-free options like a sugar substitute keep it lower in added sugar.
- Chia seeds: These transform the blended strawberry mixture into a jam-like glaze as they sit and absorb liquid. You'll find them in the health food aisle of most grocery stores.
For the smoothie base:
- Frozen strawberries: Using frozen fruit is key here - it gives the smoothie that thick, almost ice-cream-like texture without needing extra ice.
- Frozen banana: Freeze ripe bananas for the sweetest taste.
- Avocado: Half a medium avocado makes this smoothie incredibly silky and adds heart-healthy monounsaturated fats. It won't make it taste like guacamole - I promise.
- Greek yogurt: Plain or vanilla both work great. This adds protein, probiotics, and extra creaminess.
- Almond milk: Use almond milk or any milk you prefer.
- Coconut cream: Coconut cream adds a touch of richness to the flavor, but can be omitted to save on calories. Find it in the canned goods aisle near the coconut milk - or if it's unavailable, simply chill a can of coconut milk overnight and scoop the thick cream from the top.
- Protein powder or collagen: Either works - I like to use vanilla flavored here to match the original Erewhon smoothie.
- Optional add-ins: MCT oil, sea moss gel, freeze-dried strawberry powder, and vanilla extract are all great ways to level up the smoothie if you'd like. Another elevated add-in is 1 tablespoon of liquid hyaluronic acid, just make sure you're buying a food grade one.

Like all of my recipes, this Strawberry Skin Glaze Smoothie is completely customizable. You get to choose your sweetener, your add-ins, and your glass coating.
- Sweetener of your choice: In both the glaze and the smoothie base, you can use a Medjool date, honey, maple syrup, or a sugar substitute - whatever fits your taste or dietary preferences.
- Optional add-ins of your choice: This is where you can really make it your own. MCT oil adds healthy fats for energy, sea moss gel is rich in trace minerals, freeze-dried strawberry powder intensifies the strawberry flavor, and vanilla extract adds a warm, sweet depth.
- Feel free to mix up the protein source: Vanilla protein powder or vanilla collagen both work great here.
- Feel free to swap the milk: Any milk works here - oat, regular dairy, coconut milk from a carton - depending on what you have on hand or your dietary needs. For a dairy-free version, stick with almond or oat milk.

How to make the Strawberry Skin Glaze Smoothie
Here's how to make this stunning and nourishing smoothie step by step:
1. Make the strawberry chia glaze
Add the fresh strawberries and your sweetener of choice to a blender and blend until completely smooth. Pour the mixture into a small bowl, then stir in the chia seeds. Let it sit for about 20 minutes so the chia seeds can absorb the liquid and thicken everything into a jam-like consistency - don't skip this resting time, it's what gives the glaze its texture! You don't need to wash the blender after this step.
2. Blend the smoothie base
Add all of the smoothie base ingredients - frozen strawberries, frozen banana, avocado, sweetener, Greek yogurt, almond milk, coconut cream, and any optional add-ins - to the same blender. Blend on high until smooth and thick. The mixture should be noticeably thicker than a typical smoothie; if it's too thin to hold its shape against the glass, add a little more frozen fruit.
3. Prep the glasses
This is the fun part! Divide half of the prepared chia glaze between the bottoms of two tall glasses. With the remaining glaze, use a fork to drag swipes up and around the inside of each glass - this creates those gorgeous streaky lines you see through the glass. Then use the back of a spoon to press the softened coconut cream (or Greek yogurt) down the sides of each glass in vertical streaks.
4. Pour and serve
Slowly pour the blended smoothie into the center of each prepared glass so the swirls along the sides stay intact. Serve immediately!

Troubleshooting Tips
- The glaze isn't thickening: Make sure you're giving the chia seeds the full 20 minutes to absorb the liquid before moving on. If your kitchen is warm, pop the bowl in the fridge to speed things up.
- The smoothie isn't thick enough: Frozen fruit is key. If your smoothie is too thin, add more frozen strawberries or banana a handful at a time and re-blend.
- The swirls are disappearing when I pour: Your smoothie might be too thin (see above), or you're pouring too fast. Try pouring slowly from the center of the glass and let gravity do the work.

Pairing
This smoothie is filling enough to stand alone as a breakfast or snack, but it pairs beautifully with something light like a slice of whole-grain toast or a egg bite for extra staying power. Here are a few of my other favorite things to serve alongside it:
Scaling
This recipe makes 2 generous smoothies, but it doubles easily to make 4 smoothies. Just make sure your blender can handle the volume and blend in batches if needed.

Storage & Meal Prep Tips
- Make-ahead: The strawberry chia glaze can be made up to 5 days ahead and stored in an airtight container in the fridge. When you're ready to make the smoothie, just blend the base fresh.
- Storing leftovers: Smoothies are always best fresh, but if you have leftover blended smoothie, store the glass with plastic wrap on top for up to 24 hours. Give it a good shake or stir before drinking.

Ingredients
Strawberry Chia Glaze Ingredients:
- ½ cup strawberries
- Sweetener of your choice: (1 pitted Medjool dates or 1 teaspoon honey, maple syrup, or sugar substitute)
- 2 teaspoons chia seeds
Smoothie Base Ingredients:
- 2 cups frozen strawberries
- ½ cup frozen banana
- ½ medium ripe avocado
- Sweetener of your choice: (2 pitted Medjool date or 2 teaspoons honey, maple syrup, or sugar substitute)
- ½ cup plain or vanilla Greek yogurt
- 2 cups almond milk
- 2 tablespoons coconut cream
- 2 scoops vanilla protein powder or collagen
- Optional add-ins of your choice: (1 tablespoon MCT oil, 1 tablespoon sea moss gel, 1 tablespoon liquid hyaluronic acid, 1 teaspoon freeze-dried strawberry powder, 1 teaspoon vanilla extract)
For the Glass:
- 2 tablespoons coconut cream or Greek yogurt
- Prepared chia seed jam
Instructions
- Add the strawberries and sweetener to a blender. Blend until smooth.
- Pour the blended strawberry mixture into a small bowl. Stir in the chia seeds and let it sit for about 20 minutes so it can thicken up into a jam-like texture before moving on with the rest of the recipe. No need to wash the blender! Use the same one for the rest of the smoothie steps.
- To the same blender, add all smoothie base ingredients. Blend until smooth and slightly thick.
- Divide ½ of the prepared strawberry chia glaze evenly on the bottom of two tall glasses. With the remainder, use a fork to spread swipes of the glaze around the inside of each glass. Then, use the back of a spoon to divide the coconut cream or Greek yogurt between the two glasses, lightly pressing it down the sides in vertical streaks.
- Slowly pour the smoothie into the two prepared glasses.
