As a registered dietitian, I’m all about meals that are satisfying, balanced, and nutrient-dense. This tofu veggie scramble delivers just that with a perfect combo of nutrient-packed ingredients:

  • Tofu is a complete plant-based protein that’s loaded with the essential amino acids, plus it’s rich in iron and calcium—essential for bone health and energy metabolism.
  • Veggies like red bell pepper, zucchini, or broccoli add fiber, antioxidants, and essential vitamins like vitamin C to support immunity.
  • Olive oil is a source of heart-healthy monounsaturated fats, which have been shown to reduce inflammation and support brain health.

How to make tofu veggie scramble

This recipe comes together in a flash—here’s how to whip up your perfect tofu scramble: 

Sauté the veggies

Heat olive oil in a large pan over medium-high heat. Add diced onion and chosen veggies. Cook for 3–4 minutes until just tender and fragrant.

Add tofu

Crumble the well-drained tofu directly into the pan. Use a spatula to break it into smaller “egg-like” pieces as it cooks. Sauté for 3–4 more minutes.

Season and stir

Sprinkle in the nutritional yeast, garlic powder, turmeric, and black pepper. Stir to combine and cook for 1 more minute until everything is well mixed. Salt to taste.

If the mixture looks dry, add a splash of water or veggie broth to loosen it up.

Serve with your favorite base and toppings

Scoop onto a piece of toast, wrap in a tortilla, or serve alongside roasted potatoes.

Ingredients
  

Tofu Veggie Scramble Ingredients:

  • 1 tablespoon olive oil
  • 1/2 cup white onion, diced
  • 1/2 cup veggies of your choice, (red pepper, broccoli, zucchini, etc.)
  • 14 ounces firm tofu, drained
  • 2 tablespoon nutritional yeast, (or shredded cheese)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • Salt, to taste

Base of your choice: (optional but recommended)

  • Whole grain bread, toast
  • English muffin, toasted
  • Corn or flour tortillas, warmed
  • Croissant, halved
  • Steamed sweet potato
  • Roasted potatoes

Toppings of your choice: (optional but recommended)

  • Diced tomatoes
  • Diced bell peppers
  • Caramelized mushrooms
  • Finely chopped chives
  • Sliced avocado

  • Heat olive oil in a large pan over medium high heat. Add onion and veggies and saute for 3-4 minutes.
  • Break up tofu into smaller pieces with hands.
  • Add over crumbled tofu and break up more as needed with a spatula. Saute for 3-4 minutes.
  • Add over nutritional yeast, garlic powder, turmeric, black pepper and stir together for 1 more minute until everything is combined. Salt to taste. If the pan looks dry, you can add a splash of water or broth.
  • Serve tofu scramble with any desired base and toppings of your choice.
