Absolutely! This Easy Bagel Breakfast Sandwich is a great way to kickstart your day with a nutritious meal.

While bagels are often criticized for their high carb content, they can actually be part of a healthy diet. Carbohydrates are essential for providing energy to both your body and brain. As a dietitian, I just recommend balancing it out with other elements like protein, healthy fats, and colorful veggies. This balance helps you feel fuller longer and promotes stable blood sugar levels.

With this recipe, you’ll whip up a nutritious breakfast sandwich in just 10 minutes.

1. Toast the bagel

Achieve golden perfection by air frying at 350°F for 3-4 minutes or pop in a toaster.

2. Cook the egg patty

To cook your Garden Vegetable Egg Patty, follow the instructions on the box or website. You can either microwave, air fry, pop in the toaster, or bake in a toaster oven.

3. Assemble the sandwich

Layer over cheese, egg, avocado, tomatoes, and greens.

4. Finish it off with sauce

Finish it off with sauce by spreading your favorite condiment on the top half of the bagel, adding a final burst of flavor. Then, you can eat the bagel whole or cut it in half.

  • Greens of your choice: spinach, arugula, kale, sprouts, or chard
  • Sauce of your choice: hot sauce, mustard, whipped cream cheese, mayo, or chili crunch

Can you make this sandwich ahead of time?

Absolutely, making this bagel sandwich ahead of time is a great idea for those busy mornings. If you’re prepping in advance, skip toasting the bagel to avoid it becoming too hard when reheating.

To make ahead of time: Simply assemble the sandwich with all your chosen ingredients, then wrap it tightly in foil and store it in the fridge for up to 3 days. When you’re ready to eat, heat in an air fryer or toaster oven for 4-5 minutes at 350ºF until warm and crispy.

How do I store leftovers?

This bagel is best enjoyed fresh. But if you end up with extras after toasting, store the bagel in the fridge then reheat by unwrapping the foil and air frying at 350ºF for 4-5 minutes.

Ingredients
  

  • 1 bagel of your choice (choose your favorite flavor such as everything, asiago, plain, or whole wheat)
  • 1 Veggies Made Great Garden Vegetable Egg Patty
  • 1 slice cheese of your choice (cheddar, swiss, provolone, colby jack, muenster, etc.)
  • 1/4 medium ripe avocado, mashed (about 2 tablespoons)
  • 2 slices tomato
  • 1 large handful leafy greens of your choice (spinach, arugula, sprouts, kale, or chard)
  • 1 tablespoon sauce of your choice (whipped cream cheese, chili crunch, mayonnaise, mustard, or hot sauce)

Instructions
 

  • Toast the bagel in an air fryer at 350°F (175°C) for 3-4 minutes or in a toaster until golden and crispy.
  • Cook the Egg Patty per the package instructions (either in the microwave, air fryer, toaster, or oven.)
  • On the bottom half of the toasted bagel, place a slice of cheese followed by the cooked Egg Patty.
  • Spread the mashed avocado over the Egg Patty, then layer over tomato slices and greens.
  • Spread your chosen condiment on the inside of the top half of the toasted bagel, then place over the greens and serve immediately.

Meal Prep Instructions:

  • If enjoying the bagel sandwich later or to minimize mess, wrap the finished sandwich in foil or paper deli sheets and cut it down the center to achieve a deli-style presentation. This method helps keep the sandwich together and makes it easy to eat on the go.
