Mushroom Toast

This mushroom toast recipe is the perfect savory breakfast or quick and easy lunch. Plus, all you need is 4 ingredients—including creamy avocados and flavorful caramelized mushrooms!

How do you make mushroom toast?

This recipe is so simple to throw together. 

  • First, mash your avocado. I recommend scooping out the avocado with a spoon then mashing with a fork. To save yourself time, you can also find pre-mashed avocado at the store. 
  • Then, spread avocado over toast. I recommend buying a thicker slice of whole grain bread. This makes it easier to spread the mashed avocado without accidentally ripping the bread.
  • Top with mushrooms. For this recipe, you’ll want to make a batch of caramelized mushrooms ahead of time. They’re super flavorful and really elevate this avocado toast. If you have extra mushrooms, you can add them over quinoa salads, pizza, or grain bowls.
  • Sprinkle over hemp seeds. These seeds are packed with protein and add a nice crunch on top.

How do I know if my avocado is ripe? 

Before you cut an avocado, you can tell if it’s ripe by giving it a gentle squeeze. It should feel lightly soft without being overly squishy or rock hard. If it feels too hard, you can put it in a brown paper bag with a banana to speed up the ripening process.

Is this avocado toast healthy?

Yes! This toast contains healthy fats and dietary fiber from the avocado. The mushroom also provide tons of nutrients like B vitamins, vitamin D, and potassium. If you’re craving a bit of extra protein, try serving with a hard boiled egg or cheese stick on the side.

Customize it your way

I always like to provide you with customizable options for my recipes. If you don’t have hemp seeds on hand, feel free to swap for pumpkin seeds, toasted sesame seeds, or crushed nuts.
