Ingredients youโll need
Hereโs a breakdown of the main ingredients:
- Mini bell peppers: These colorful beauties are best when firm and bright. Look for a mix of red, orange, and yellow peppers for more color. In the photos and video, you’ll see I use Nature Fresh Farmsย Sweet S’NAPSโข. These peppers are greenhouse grown and SO crunchy.
- Filling of your choice: Choose from options like hummus, whipped cream cheese, or guac. Each brings a unique flavor and texture to the table.
- Spices or toppings: Spices like smoked paprika, red pepper flakes, or everything bagel seasoning can add that final touch of flavor. Experiment with different combinations to find your favorite.
How to make customizable stuffed mini peppers
Hereโs how to bring these delightful bites to life:
- Prep the peppers: Start by washing the mini bell peppers thoroughly and patting them dry. Slice each pepper in half lengthwise, and remove the seeds and membranes to create little “boats.”
- Fill the peppers: Spoon your chosen filling into each pepper half. You can mix and match fillings for variety or stick to a single favorite.
- Top with spices: Sprinkle your selected spices or toppings over the filled pepper boats. This step adds flavor and visual appeal.
- Serve and enjoy: Arrange your stuffed peppers on a platter, and theyโre ready to serve!

Recipe tips and tricks
- Serving tips: These stuffed mini peppers are great on their own, but you can also serve them with a side of whole-grain crackers or a light salad. For drinks, consider pairing with a refreshing iced tea or a glass of crisp white wine.
- Troubleshooting tips: I wonโt lie, getting the peppers prepped takes a bit of time. If you can have a friend or family member help you out, this will save on time.
- Scaling tips: Planning for a larger crowd? This recipe is easy to double or triple. Simply multiply the ingredients, and youโre good to go.
Customize it your way
Like all of my other recipes, these stuffed mini peppers are completely customizable. You get to choose what fillings and spices you want to use:
- Fillings of your choice: You can choose any favorite hummus, whipped cream cheese, or guac. Feel free to make your own homemade or stick with a ready-to-go store bought brand.
- Spices of your choice: Smoked paprika, red pepper flakes, and bagel seasoning are some of our go-to spices. However, feel free to use any you like best.
Can I make it ahead of time?
Yes, you can! Prepare the peppers and fillings up to a day in advance and store them separately in airtight containers. When you’re ready to serve, simply fill the peppers and add your toppings. This makes them perfect for meal prep or party planning.
How do I store leftovers?
Store any leftovers in an airtight container for up to 3 days in the fridge. Unfortunately, these donโt freeze well, as the peppers tend to lose their crunch.
