- Breadcrumbs – Helps bind the patties together. Use a gluten-free version if needed.
- Onion – You can use whatever you have on hand. Yellow onion adds a subtle sweetness whereas red onion gives it a sharper bite.
- Cilantro – Brightens up the patties with fresh herbal notes. Swap with parsley if preferred.

- In a large bowl, mix mashed sweet potatoes, breadcrumbs, onion, feta, egg, cilantro, garlic, cumin, paprika, coriander, salt, and pepper.
- Scoop out portions of the mixture and form into small patties.
- Place patties on the prepared baking sheet and lightly spray or brush with olive oil.
- Bake for 20-25 minutes, flipping halfway, until golden and firm. You can also air fry at 400°F for 10-12 minutes for an extra crispy finish.

To make this recipe vegan, replace the egg with a flax egg (1 tbsp flaxseed meal + 2.5 tbsp water, let sit for 5 minutes). You’ll also want to swap out the feta for vegan feta and use a plant-based Greek style yogurt.

Sweet Potato Patties with Whipped Feta Dip

- 1 medium sweet potato (We love using a Bako Single Sweets Potato for easy steaming)
- 1/2 cup breadcrumbs or gluten-free breadcrumbs
- 3 tablespoons finely chopped onion of your choice, (red, yellow, white, or green onions)
- 3 tablespoons finely chopped fresh cilantro
- 1/4 cup crumbled feta cheese
- 1 large egg (or flax egg — see vegan instructions above)
- 1 teaspoon garlic, minced (about 1 clove)
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon coriander
- Salt and pepper, to taste
- Olive oil spray
For the Whipped Feta Dip:
- 1/2 cup feta cheese
- 1/4 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 teaspoon minced garlic
- Black pepper, to taste

Instructions:
- Preheat oven to 400°F. Line a baking sheet or air fryer basket with parchment paper.
- Steam the Sweet Potato: Pierce a medium sweet potato a few times with a fork and microwave for 5-7 minutes, or until fork-tender, then let it cool before mashing. You should end up with about 1 cup mashed.
- In a large bowl, combine the mashed sweet potatoes, breadcrumbs, onion, feta cheese, egg, cilantro, garlic, cumin, paprika, coriander, salt, and pepper. Mix until well combined.
- Scoop out the mixture and form into small patties. Place on the prepared baking sheet.
- Lightly spray both sides of the patties with olive oil spray.
- Oven Instructions: Bake for 20-25 minutes, or until golden and crispy. Be sure to flip halfway through for even cooking.
- Air Fryer Instructions: Preheat air fryer to 400°F for 3-4 minutes. Air fry for 12-15 minutes, until golden and crispy. Be sure to flip halfway through for even cooking.
- While patties are cooking, blend all whipped feta ingredients in a food processor or blender and blend until smooth and creamy, about 1 minute.
- Let the patties cool slightly before serving. Enjoy with whipped feta dip and a drizzle of olive oil on top, if desired.
