What is a mug muffin?
Mug muffins or cakes are typically single serving recipes. Simple ingredients are added to a coffee mug which is then microwaved for a short amount of time to “bake” the recipe.
For this single serve mug muffin, I’m using ground flaxseed as a gluten free alternative to flour typically used.
Is this recipe healthy?
Flaxseed is the star of the show here. Ground flaxseed gives this mug recipe it’s muffin-like texture while still remaining gluten-free and low in carbohydrates. It’s also packed with healthy omega-3 fats and protein. Omega-3s have been shown to be beneficial for heart and brain health.
Flaxseed is also an incredible source of fiber. We should aim to get about 25-30 grams of fiber per day. Just ¼ cup flaxseed contains 10 grams of fiber, helping you work towards meeting your fiber needs!
This Banana Chocolate Chip Flax Mug Muffin contains minimal added sugar as it’s mainly naturally sweetened from the banana. It’s also good for portion control as it makes only one serving.

This recipe takes less than 5 minutes to mix up. You can easily combine everything in a coffee mug the night before and pop it in the microwave for 60 seconds at home or at work to enjoy.
How can I customize this mug muffin?
My favorite way to customize this recipe is the topping. I personally like to add sliced banana and peanut butter over the top. You could also pile on yogurt, granola, jams, or berries.
If you’re not a fan of banana and chocolate, you could also swap these ingredients out for 3 tablespoons of other add-ins like coconut flakes, dried fruit, or chopped nuts.
