Colorful Hummus Veggie Pinwheels
Ingredients
- 6 – 8-inch whole wheat tortillas*
- 1 cup hummus of your choice (classic, everything bagel, pine nut, roasted red pepper, southwest, garlic, caramelized onion, etc.)
- 6 large leaves of leafy greens of your choice, washed and completely dried (I typically use a large romaine leaf but you could also use kale, spinach leaves, or chard. Itโs important for the leaves to be dried so it doesnโt get the tortillas soggy)
- 6 cups veggies of your choice, sliced into matchsticks (bell peppers, cucumbers, carrots, tomatoes, cabbage, etc. Try to pat the veggies dry with a paper towel before adding so the wrap doesnโt get soggy – especially watery veggies like cucumber)
Instructions
- Lay out tortillas and spread a thin layer of hummus over each one (about 2 tablespoons per wrap).
- Place dried lettuce leaf or leafy green on top of the hummus. Press the lettuce or leafy green down to flatten if needed.
- Arrange the sliced veggies evenly across the lettuce leaf in horizontal rows.
- Roll each wrap tightly towards the horizontal rows of veggies then slice into 1-inch pinwheels.
- Store pinwheels in an airtight container in the fridge for up to 3 days.
